Start the New Year Right with This RV Recipe

Start 2024 right in your new or used RV with a delicious brunch! If you’re ringing in the new year the night before, allow yourself to sleep in…then enjoy these delicious breakfast sandwiches that are high on protein and loaded with delicious flavor!

New Year’s Brunch Sandwiches

Ingredients

  • Bread of your choice (we recommend everything-bagels, baguettes, or toasted brioche buns)
  • Avocado, sliced thinly (1/2 avocado per sandwich)
  • 2 eggs per sandwich, scrambled or fried
  • Sliced tomato – we recommend beefsteak or Roma
  • Sliced cheddar cheese
  • Salt & pepper to taste
  • 2-4 slices of bacon per sandwich

Spread of your choice: mayonnaise, Dijon mustard, or herbed cream cheese spread

Assembly:

  • Toast bread in toaster oven or under broiler.
  • Spread lightly with the spread of your choice
  • To one piece of bread, add the avocado and top with eggs, then tomato.
  • To the other piece, add the bacon and top with cheese.
  • Sprinkle the tomato with salt and pepper to taste.
  • Slide the open faced sandwich under the broiler until the cheese is melty (30-60 seconds – make sure it doesn’t scorch!).
  • Remove from oven and press both halves of the sandwich together. Enjoy!

My family loves these sandwiches with orange or grapefruit juice – or even a glass of tomato juice if you’re needing an extra acidic kick to start the new year! I often prepare and fry full packages of bacon in advance and freeze in food storage bags – an especially RV-friendly option. Or, to make it even quicker, you can easily use the fully cooked heat-and-eat bacon found at the grocery store.
